How to store green cardamom so it stays fresh

Cardamom loses its aroma fast in heat, light and air. Here is how we keep pods green and fragrant from Idukki to your kitchen.

Green cardamom gets its aroma from volatile oils inside the pod. Heat, light and air break these oils down, so good storage keeps the flavour for months.

Keep the pods whole

Grind only what you need. Whole pods hold their oils for up to a year. Ground cardamom loses most of its aroma in a few weeks.

Use an airtight jar

  • Pick a glass or steel jar with a tight lid.
  • Keep it away from the stove and from direct sunlight.
  • Use a dry spoon every time. Moisture causes mould.

Check before you cook

Crack one pod. Fresh seeds are dark, sticky and strongly fragrant. Pale, dry seeds have lost their oils.

Tip: toast the pods lightly in a dry pan for 30 seconds to bring back some aroma before you grind them.
